I love this recipe because it's so quick and easy. It's fresh with lots of flavour and you have to get your hands messy with this one. I love the lettuce cups holding all the mince together while you eat it but you can just chop up your lettuce in a bowl and put the mince over the top and eat it with a fork.
Ingredients:
500g pork mince
20g sesame oil
20g peanut oil
3 garlic cloves diced
5cm ginger diced
100g brown mushrooms cut into thin slices
15g castor sugar
20g soy sauce (tamari gluten free)
35g oyster sauce
15g rice wine vinegar
sea salt to taste
100g bean sprouts
40g peanuts
Iceberg lettuce
Method:
In a frying pan put the sesame and peanut oil and heat. Add the pork mince garlic and ginger and cook until brown. Then add the mushrooms and cook for a few minutes. Then add the sugar, soy sauce, oyster sauce and rice wine vinegar. Once the sauce is combined and sugar dissolved, you're ready to serve. grab a lettuce cup, serve some of the mince inside, add some peanuts and beansprouts. Enjoy!
