32. Sweet Potato Taco Bowl

This is so yummy and we have it regularly for lunch or dinner. You can load it up with whatever salads you fancy. Such a quick and healthy meal.


INGREDIENTS:


  • Sweet Potato chopped into bite sized squares

  • coconut oil or oil of choice

  • Celtic sea salt

  • Beef mince

  • Mingles taco seasoning

  • Spinach or iceberg lettuce chopped

  • Tomatoes diced

  • Grated Cheese

  • Avocado sliced

  • Pickles


METHOD:


Preheat oven to 170 degrees and line a baking tray with baking paper. Place diced sweet potato on tray and mix through oil and salt. Place in the oven to cook until soft.

While the sweet potato cooks, brown off the mince and cook with mingle seasoning. You can also add extra veggies into the mince if you would like to.

Once the sweet potato is cooked, place sweet potato on the bottom of bowl. Then place spinach or iceberg lettuce on top of sweet potato. Place mince on top of the lettuce then cheese and the rest of the salad over the cheese. Enjoy this nourishing bowl of goodness!
