26. Healthy yoghurt cheesecake

If you love cheesecake like my family does then this is a healthy yummy alternative! Make sure to give it a try and let me know what you think!


INGREDIENTS:


• 3 Eggs

• 250gms of yoghurt (I use vanilla coconut yoghurt because it's dairy free)

• 1 tbsp cornstarch or Arrowroot (I use Arrowroot as it's gluten free)

• 50 ml of sweetener ( I use natural maple syrup)

• Frozen mixed berries

• Optional natural peanut butter


METHOD:


• Turn oven on to 180°. Get a baking dish and pour as many frozen berries as you like in the bottom. If you're having peanut butter like me, drop scoops over the frozen berries. Mix all the other ingredients together in a bowl. Once it's all mixed together pour over the berries.

Place in the oven and cook for 40 minutes or until set. Enjoy by itself or add extra yoghurt, cream or icecream over the top! Yum!! X
