10. Healthy blueberry muffins

We love a good muffin but they can be loaded with lots of sugar and flour that can be upsetting to our tummy. We have this paleo blueberry muffins that are made from coconut flour that is easy on our tummy. It makes roughly 10 and I love having it warm with coconut yoghurt on top. Also this is great snack for the kids lunch boxes!


• 1/4 coconut oil

• 1/2 cup coconut flour

• 1/2 teaspoon baking powder

• 1/2 teaspoon of salt

• 1/2 cup of mashed banana

• 4 large eggs

• 6 tablespoons of honey

• 1 teaspoon of vanilla extract

• 2/3 cup of blueberries

• optional to add in some choc chips


Preheat the oven to 205°c and spray with non stick oil.

Mix the coconut flour, baking powder and salt together in a bowl.

In a separate bowl mix all the remaining ingredients together.

Combine the dry ingredients to the wet and mix thoroughly. Once combined add in blueberries and choc chips.

Spread batter evenly better 10 muffin cups, filling about 3/4 full.

Place in the oven for 16 to 18 minutes or until toothpick comes out clean. Leave to cool for 5 minutes and then enjoy your healthy blueberry muffin :)
