I love choc chip biscuits. It's definitely a weakness of mine. The biscuits that you buy in the shop aren't the best ingredients but I've got a healthier alternative for you. Give these a try and let me know what you think.
INGREDIENTS:
• 1/2 cup of coconut flour
• 1/4 cup melted coconut oil
• 1/4 cup of honey
• 2 large eggs
• 1/4 teaspoon vanilla extract
• 1/4 teaspoon sea salt
• 1/4 teaspoon baking soda
• 1/3 cup of choc chips
METHOD:
Preheat the oven to 175°. Mix all the wet ingredients together first. Then add in all the dry ingredients to the wet. The coconut flour will soak up the wet ingredients making it like a batter. At the end mix through the choc chips. Scoop out a small ball of mixture and place it on a lined tray and flatten out. Repeat until all the mixture is gone. It should make around 12 biscuits. Bake in the oven for for 12 to 14 minutes. Let them cool and then enjoy with a cup of tea! X
