12. Egg and bacon muffins

These muffins are the perfect solution for a quick healthy breakfast, snack or pack for the kids lunchboxes. Packed full of healthy fats and all the goodness eggs give! I generally have eggs nearly everyday because they're that good for you. You can add anything that tickles your fancy into this recipe. It really is super simple!


INGREDIENTS


  • 12 Rashes of bacon

  • 12 Eggs

  • Handful chopped spinach

  • Handful chopped tomatoes

  • Pinch of Celtic sea salt

  • Handful of grated cheese or nutritional yeast (optional)

  • Tablespoon of nutriorganics bone broth powder (optional)


METHOD


  • Preheat oven to 190°

  • Place one rash of bacon around the outside of each muffin cup

  • Mix the eggs, spinach, tomatoes, sea salt, cheese or nutritional yeast and bone broth if using.

  • Pour mixture into each muffin cup

  • Bake in preheated oven for about 20 minutes until egg mixture is set.
