16. Frozen Yoghurt cups

This is such a super simple healthy recipe to tick off that sweet tooth craving! We use coconut yoghurt but you can use Greek or any yoghurt that you like. You dont have to add in protein powder but it gives you that extra bit of protein that most people don't get enough of everyday. You can also add in anything that you like and change it up everytime you make them. If you have silicone muffin mold they work well for this recipe. If you don't then I would put muffin liners in the tray.


INGREDIENTS


• 1 Cup of coconut yoghurt or yoghurt of choice

• 1 scoop of collagen protein powder (optional)

• 70% dark chocolate enough to cover 6 cups (I used half a block of lindt 70% dark chocolate)

• Raspberries

• 1 Tbs of coconut oil

• Celtic sea salt


METHOD


Mix the coconut yoghurt and protein powder together. Pour evenly into 6 muffin cups. Push raspberries into the yoghurt of each cup.


In a separate bowl, melt dark chocolate and coconut oil together. Pour the melted mixture over the top of each cup and then sprinkle with sea salt.


Put the muffin tray into the freezer to set. Remove them from the freezer a while before you eat them and enjoy this healthy sweet snack!
