4. Amazing butter chicken recipe



I love to follow many healthy websites but one of my favourites is ,Quirky cooking because she has so many healthy recipes. I have fallen in love with her butter chicken recipe that is dairy and gluten free. I would love to share it with you too so you can enjoy a healthier version of butter chicken. Ingredients:


• 4 Garlic cloves

• 3 cm fresh Ginger peeled

• 1 Brown onion

• 100g of coconut oil

• 1/2 tsp of ground cinnamon

• 2 tsp of ground paprika

• 3 tsp of garam masla

• 1 tsp of cardamom

• 2 tsp ground coriander

• 2 tsp ground cumin

• 2 tsp ground turmeric

• 500gms of coconut cream

• 3 Tbsp of lemon juice

• 200gms of tomato paste

• 3 tsp sea salt

• 1kg of chicken thigh fillets cut into 4 cm pieces



Method:


  1. Chop up onion, garlic and ginger, then saute with the coconut oil in frying pan

  2. Add chicken and spices and cook on high heat for 5 to 10 minutes

  3. Add coconut cream, lemon juice, tomato paste and salt. Reduce to simmer and cover for 20 minutes until chicken is cooked through and the sauce has thickened.

  4. Serve with cauliflower rice/boiled rice and steamed vegetables.


This recipe makes so much so you can freeze some meals to have at a later date. Definitely a favourite in my home!
