8. Easy Veggie Frittata



I just love to make things that are quick, easy and packed full of goodness! Eggs are one of my favourite ingredients and I generally have them nearly every day because they are so good for you. This Frittata has 6 eggs in it and I also love to just put in any left overs that are in the fridge.


INGREDIENTS


• 6 eggs

• 1/4 Almond milk or milk of preference

• 1 cup of any veggies (broccoli, capsicum, mushrooms, tomato's, peas etc)

• 1 big handful of baby spinach

• If I have bone broth or vegetable broth, I get the nutra organics powder, add in a tablespoon

• Optional to add cheese or feta


METHOD

Mix all the ingredients together in a bowl and then place into a frying pan on the stove. If your frying pan can go into the oven turn your oven on to 120°c and once the bottom is cooked place the frying pan into the oven, to cook the top.


If your frying pan can't go into the oven, turn on your grill and put the pan under the grill leaving the handle out and cook until the top is then set.


You can have this for lunches or dinners with a yummy salad. Healthy, easy and full of goodness.
